Chocolate cherry cake...the best thing I learned to make in microwave cooking classes back in the early 80's. A box of cake mix, a can of cherry pie filling, 1/2 cup of sour cream, and 2 eggs...mix, put in a microwaveable bundt pan, cover with plastic wrap, elevate on a plate in the micro and cook for 12-14 minutes (modern high-powered microwaves would be at 12 minutes or slightly less). Take it out of the microwave, uncover, and rest on the counter for another 10 minutes before taking it out of the pan. Once I switched to a silicone bundt pan, there were no more worries about the cake sticking (and do NOT grease the pan). Obviously I like frosting (from a can). Quick, easy, and GOOD.
